Ingredients

  • 8 oz thick-cut bacon, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups dried navy beans, rinsed and sorted
  • 4 cups water
  • 1/2 cup molasses
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar

Instructions

  1. Set the Instant Pot to sauté mode and add the diced bacon. Cook until the bacon is crispy, about 5 minutes. Use a slotted spoon to remove the bacon and set aside on a paper towel-lined plate.
  2. Add the chopped onion to the pot and sauté in the bacon fat until translucent, about 3 minutes. Stir in the minced garlic and sauté for another minute. Turn off the sauté function.
  3. Add the rinsed navy beans, water, molasses, ketchup, brown sugar, mustard, smoked paprika, salt, and black pepper to the Instant Pot. Stir well to combine all ingredients.
  4. Secure the lid on the Instant Pot and set it to ‘Manual’ or ‘Pressure Cook’ on high pressure for 60 minutes. Once the time is up, allow for a natural pressure release for 15 minutes before carefully performing a quick release if needed.
  5. Carefully open the lid and stir in the apple cider vinegar and cooked bacon. Taste and adjust seasoning if necessary.
  6. Serve the baked beans warm as a side dish to complement any barbecue or picnic.
