Ingredients
- 1.5 lbs pork tenderloin
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1/4 teaspoon red pepper flakes
Instructions
- Season the pork tenderloin with salt and black pepper on all sides.
- Set the Instant Pot to ‘Sauté’ mode and add the olive oil. Once hot, sear the pork tenderloin for about 3-4 minutes on each side, or until browned.
- While the pork is searing, prepare the balsamic glaze. In a small mixing bowl, combine balsamic vinegar, honey, minced garlic, Dijon mustard, and red pepper flakes.
- Once the pork is browned, pause the Instant Pot by selecting ‘Cancel’. Pour the balsamic glaze mixture over the pork tenderloin.
- Secure the lid on the Instant Pot and set it to ‘Pressure Cook’ on high for 10 minutes. Make sure the valve is set to ‘Sealing’.
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to ‘Venting’ to release any remaining pressure.
- Open the lid and using tongs, carefully remove the pork tenderloin to a cutting board. Let it rest for 5 minutes before slicing.
- To thicken the glaze in the Instant Pot, set it back to ‘Sauté’ mode and let the sauce simmer for about 5 minutes or until slightly thickened. Stir occasionally.
- Slice the pork tenderloin and drizzle with the thickened balsamic glaze before serving.
