Ingredients

  • 1.5 lbs pork tenderloin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Season the pork tenderloin with salt and black pepper on all sides.
  2. Set the Instant Pot to ‘Sauté’ mode and add the olive oil. Once hot, sear the pork tenderloin for about 3-4 minutes on each side, or until browned.
  3. While the pork is searing, prepare the balsamic glaze. In a small mixing bowl, combine balsamic vinegar, honey, minced garlic, Dijon mustard, and red pepper flakes.
  4. Once the pork is browned, pause the Instant Pot by selecting ‘Cancel’. Pour the balsamic glaze mixture over the pork tenderloin.
  5. Secure the lid on the Instant Pot and set it to ‘Pressure Cook’ on high for 10 minutes. Make sure the valve is set to ‘Sealing’.
  6. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to ‘Venting’ to release any remaining pressure.
  7. Open the lid and using tongs, carefully remove the pork tenderloin to a cutting board. Let it rest for 5 minutes before slicing.
  8. To thicken the glaze in the Instant Pot, set it back to ‘Sauté’ mode and let the sauce simmer for about 5 minutes or until slightly thickened. Stir occasionally.
  9. Slice the pork tenderloin and drizzle with the thickened balsamic glaze before serving.
