Ingredients
- 3 pounds (1.4kg) pork shoulder, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 orange, juiced
- 1 lime, juiced
- 1 teaspoon (5ml) ground cumin
- 1 teaspoon (5ml) dried oregano
- 1 teaspoon (5ml) smoked paprika
- 1 teaspoon (5ml) salt
- 1/2 teaspoon (2.5ml) black pepper
- 1/2 cup (120ml) chicken broth
- 2 tablespoons (30ml) vegetable oil (for crisping)
Instructions
- In the Instant Pot, combine the pork shoulder, onion, garlic, orange juice, lime juice, cumin, oregano, smoked paprika, salt, pepper, and chicken broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 45 minutes.
- Once the cooking cycle is complete, perform a natural release for 10 minutes, then a quick release of the remaining pressure.
- Remove the pork from the Instant Pot and shred it using two forks.
- Heat the vegetable oil in a skillet over medium-high heat. Add the shredded pork in batches and cook until crispy on the edges.
- Serve the carnitas in tacos, burritos, or bowls with your favorite toppings.
- Tip: Serve with fresh cilantro, diced onions, and a squeeze of lime juice for extra flavor.
