Ingredients

  • 3 pounds (1.4kg) pork shoulder, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 teaspoon (5ml) ground cumin
  • 1 teaspoon (5ml) dried oregano
  • 1 teaspoon (5ml) smoked paprika
  • 1 teaspoon (5ml) salt
  • 1/2 teaspoon (2.5ml) black pepper
  • 1/2 cup (120ml) chicken broth
  • 2 tablespoons (30ml) vegetable oil (for crisping)

Instructions

  1. In the Instant Pot, combine the pork shoulder, onion, garlic, orange juice, lime juice, cumin, oregano, smoked paprika, salt, pepper, and chicken broth. Stir to combine.
  2. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 45 minutes.
  3. Once the cooking cycle is complete, perform a natural release for 10 minutes, then a quick release of the remaining pressure.
  4. Remove the pork from the Instant Pot and shred it using two forks.
  5. Heat the vegetable oil in a skillet over medium-high heat. Add the shredded pork in batches and cook until crispy on the edges.
  6. Serve the carnitas in tacos, burritos, or bowls with your favorite toppings.
  7. Tip: Serve with fresh cilantro, diced onions, and a squeeze of lime juice for extra flavor.
