Ingredients
- 1 cup steel cut oats
- 2 cups water
- 2 cups unsweetened almond milk (or milk of choice)
- 2 medium apples, peeled, cored, and diced
- 1 teaspoon ground cinnamon
- 2 tablespoons maple syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon butter or coconut oil
- Optional garnishes: chopped nuts, additional maple syrup, or fresh apple slices
Instructions
- Prepare your ingredients by measuring the oats, water, and almond milk. Peel, core, and dice the apples. Set aside all ingredients together for easy access.
- Set your Instant Pot to the ‘Sauté’ function. Add 1 tablespoon of butter or coconut oil. Once melted, add the steel cut oats and stir for about 2-3 minutes until they are lightly toasted. This step enhances the nutty flavor of the oats. Turn off the ‘Sauté’ function.
- Add the water, almond milk, diced apples, cinnamon, maple syrup, and salt to the Instant Pot. Stir well to combine all ingredients.
- Securely fasten the lid on the Instant Pot and set the valve to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ setting on high pressure and set the timer for 4 minutes.
- Once the cooking time is complete, allow the pressure to naturally release for 10 minutes. Then, carefully turn the valve to ‘Venting’ to release any remaining pressure. Remove the lid once it is safe to do so.
- Stir in the vanilla extract to integrate its flavor throughout the oats. Taste and adjust sweetness if desired by adding more maple syrup.
