Ingredients

  • 1 cup (200g) basmati rice, rinsed
  • 4 cups (960ml) whole milk
  • 1/2 cup (100g) sugar
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (2g) ground cinnamon
  • 1/2 teaspoon (1g) ground cardamom
  • 1/4 teaspoon (0.5g) ground ginger
  • 1/4 teaspoon (0.5g) ground cloves
  • 1/4 teaspoon (0.5g) ground nutmeg
  • 1/4 cup (40g) raisins (optional)
  • Chopped nuts or whipped cream for garnish (optional)

Instructions

  1. Add the rinsed rice, milk, sugar, vanilla extract, and all the spices (cinnamon, cardamom, ginger, cloves, and nutmeg) to the Instant Pot. Stir to combine.
  2. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  3. Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  4. Open the lid and stir the rice pudding. If using raisins, add them now and let them plump up in the warm pudding.
  5. Serve warm or chilled, garnished with chopped nuts or whipped cream if desired.
  6. Tip: For a dairy-free version, substitute whole milk with coconut milk or almond milk.
