Ingredients
- 1 cup (200g) basmati rice, rinsed
- 4 cups (960ml) whole milk
- 1/2 cup (100g) sugar
- 1 teaspoon (5ml) vanilla extract
- 1 teaspoon (2g) ground cinnamon
- 1/2 teaspoon (1g) ground cardamom
- 1/4 teaspoon (0.5g) ground ginger
- 1/4 teaspoon (0.5g) ground cloves
- 1/4 teaspoon (0.5g) ground nutmeg
- 1/4 cup (40g) raisins (optional)
- Chopped nuts or whipped cream for garnish (optional)
Instructions
- Add the rinsed rice, milk, sugar, vanilla extract, and all the spices (cinnamon, cardamom, ginger, cloves, and nutmeg) to the Instant Pot. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
- Open the lid and stir the rice pudding. If using raisins, add them now and let them plump up in the warm pudding.
- Serve warm or chilled, garnished with chopped nuts or whipped cream if desired.
- Tip: For a dairy-free version, substitute whole milk with coconut milk or almond milk.
