- 1 pound (450g) large shrimp, peeled and deveined
- 1 pound (450g) baby potatoes, halved
- 2 ears of corn, cut into thirds
- 1/2 pound (225g) smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups (960ml) chicken broth
- 2 tablespoons (30ml) Cajun seasoning
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions
- Add the baby potatoes, corn, sausage, onion, garlic, chicken broth, Cajun seasoning, and lemon slices to the Instant Pot. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Open the lid and add the shrimp. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 2 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Open the lid and stir the shrimp boil. Adjust seasoning if needed.
