Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined
  • 8 ounces (225g) penne pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (30ml) Cajun seasoning
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to the ‘Sauté’ function. Add the onion, garlic, and red bell pepper. Sauté for 2-3 minutes until softened.
  2. Add the penne pasta, chicken broth, Cajun seasoning, salt, and pepper. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Open the lid and stir in the shrimp and heavy cream. Set the Instant Pot to ‘Sauté’ mode and cook for 2-3 minutes, or until the shrimp are pink and cooked through.
  6. Stir in the grated Parmesan cheese. Adjust seasoning if needed.
