Ingredients
- 1 pound (450g) large shrimp, peeled and deveined
- 8 ounces (225g) penne pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups (480ml) chicken broth
- 1 cup (240ml) heavy cream
- 2 tablespoons (30ml) Cajun seasoning
- 1/2 cup (50g) grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Set the Instant Pot to the ‘Sauté’ function. Add the onion, garlic, and red bell pepper. Sauté for 2-3 minutes until softened.
- Add the penne pasta, chicken broth, Cajun seasoning, salt, and pepper. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Open the lid and stir in the shrimp and heavy cream. Set the Instant Pot to ‘Sauté’ mode and cook for 2-3 minutes, or until the shrimp are pink and cooked through.
- Stir in the grated Parmesan cheese. Adjust seasoning if needed.
- Serve hot, garnished with chopped parsley.
