Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) shredded cheddar cheese
  • 2 tablespoons (30g) unsalted butter
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Add the cauliflower florets and 1 cup of water to the Instant Pot.
  2. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes.
  3. Once the cooking cycle is complete, perform a quick release of the pressure.
  4. Drain the cauliflower and return it to the Instant Pot.
  5. Add heavy cream, cheddar cheese, butter, garlic, salt, and pepper. Mash or blend until smooth and creamy.
  6. Serve hot, garnished with chopped chives or parsley if desired.
  7. Tip: Add a sprinkle of Parmesan cheese for extra flavor.
