Ingredients

  • 1 pound of baby carrots
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Start by washing the baby carrots thoroughly in cold water. This removes any dirt and ensures they are clean for cooking.
  2. Plug in your Instant Pot and add the baby carrots directly to the inner pot.
  3. Pour in 1/2 cup of balsamic vinegar and 2 tablespoons of honey over the carrots. The combination of vinegar and honey will create the perfect sweet and tangy glaze.
  4. Drizzle 2 tablespoons of olive oil over the mixture. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. These seasonings will enhance the natural sweetness of the carrots.
  5. Seal the Instant Pot with the lid and turn the knob to the ‘Sealing’ position. Select the ‘Pressure Cook’ or ‘Manual’ setting, and set the timer for 4 minutes.
