Ingredients

  • 1 pound (450g) ground beef
  • 1 small head of cabbage, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups (960ml) beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup (100g) uncooked rice
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Set the Instant Pot to the ‘Sauté’ function. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped onion and garlic to the pot. Sauté for 2-3 minutes until softened.
  3. Add the chopped cabbage, beef broth, diced tomatoes, rice, thyme, oregano, salt, and pepper. Stir to combine.
  4. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  5. Once the cooking cycle is complete, perform a quick release of the pressure.
  6. Open the lid and stir the soup. Adjust seasoning if needed.
  7. Serve hot with crusty bread or crackers.
  8. Tip: Garnish with fresh parsley or a dollop of sour cream for extra flavor.
