Ingredients

  • 1 small head of cabbage, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups (960ml) vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to the ‘Sauté’ function. Add the chopped onion and garlic. Sauté for 2-3 minutes until softened.
  2. Add the chopped cabbage, carrots, celery, vegetable broth, diced tomatoes, thyme, oregano, salt, and pepper. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Open the lid and stir the soup. Adjust seasoning if needed.
  6. Serve hot, garnished with chopped parsley.
  7. Tip: Add a squeeze of lemon juice or a sprinkle of red pepper flakes for extra flavor.
