Ingredients
- 1 small head of cabbage, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups (960ml) vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon (5ml) dried thyme
- 1 teaspoon (5ml) dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Set the Instant Pot to the ‘Sauté’ function. Add the chopped onion and garlic. Sauté for 2-3 minutes until softened.
- Add the chopped cabbage, carrots, celery, vegetable broth, diced tomatoes, thyme, oregano, salt, and pepper. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Open the lid and stir the soup. Adjust seasoning if needed.
- Serve hot, garnished with chopped parsley.
