Ingredients

  • 1 pound (450g) carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) grated ginger
  • 4 cups (960ml) vegetable broth
  • 1/2 cup (120ml) heavy cream (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to the ‘Sauté’ function. Add the onion, garlic, and ginger. Sauté for 2-3 minutes until softened.
  2. Add the chopped carrots and vegetable broth. Stir to combine.
  3. Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
  4. Once the cooking cycle is complete, perform a quick release of the pressure.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Stir in the heavy cream (if using) and season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley.
