Ingredients
- 1 pound (450g) carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5ml) grated ginger
- 4 cups (960ml) vegetable broth
- 1/2 cup (120ml) heavy cream (optional)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Set the Instant Pot to the ‘Sauté’ function. Add the onion, garlic, and ginger. Sauté for 2-3 minutes until softened.
- Add the chopped carrots and vegetable broth. Stir to combine.
- Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode for 10 minutes.
- Once the cooking cycle is complete, perform a quick release of the pressure.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Stir in the heavy cream (if using) and season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
