Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 4 cups chopped green cabbage
- 2 large carrots, sliced
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup uncooked white rice
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add 1 pound of ground beef. Cook while breaking apart the meat with a spoon until it’s browned and cooked through. Transfer the cooked beef to a bowl and set aside.
- In the same pot, reduce heat to medium and add 1 small diced onion. Sauté for about 4 minutes until softened. Add 2 minced garlic cloves and cook for another 30 seconds until fragrant.
- Add 4 cups of beef broth, 2 cups of water, 4 cups of chopped green cabbage, 2 large sliced carrots, and bring the mixture to a boil. Stir in 1 can of diced tomatoes (with juice) and 2 tablespoons of tomato paste.
- Add 1 teaspoon of paprika, 1/2 teaspoon of dried thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Return the cooked ground beef to the pot and stir to combine. Bring to a simmer.
- Stir in 1/4 cup of uncooked white rice and cover the pot with a lid. Let the soup simmer on low heat for about 30 minutes or until the cabbage and carrots are tender and the rice is cooked.
- Stir in 2 tablespoons of chopped fresh parsley before serving. Ladle the soup into bowls and serve hot.
