Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 (4 oz) cans diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 3 cups low-sodium chicken broth
- 2 (15 oz) cans white beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Stir frequently to avoid burning.
- Add the minced garlic to the pot and sauté for another 1 minute, stirring constantly to prevent browning.
- Add the chicken pieces to the pot. Cook until the chicken is lightly browned on all sides, about 5-7 minutes. It’s okay if the chicken is not fully cooked as it will continue cooking in the broth.
- Stir in the diced green chilies, cumin, chili powder, oregano, and cayenne pepper. Cook for another 2 minutes to toast the spices, stirring constantly.
- Pour in the chicken broth, then add the white beans and corn. Stir well to combine all ingredients. Season with salt and black pepper to taste.
- Bring the chili to a boil, then reduce the heat to low and simmer, uncovered, for 25-30 minutes. Stir occasionally to prevent sticking.
- Once the chili has thickened and the chicken is cooked through, remove the pot from heat. Stir in the sour cream, fresh cilantro, and lime juice. Adjust the seasoning if necessary.
- Serve the white chicken chili hot. If you like, garnish with additional cilantro or a dollop of sour cream for extra flavor.
