- 1 pound chicken breast, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cornstarch
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 1 cup vegetable oil for frying
- 1 cup pineapple chunks, drained
- 1/2 red bell pepper, cut into cubes
- 1/2 green bell pepper, cut into cubes
- 1/4 cup onion, chopped
- 1/2 cup white sugar
- 1/4 cup apple cider vinegar
- 3 tablespoons ketchup
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
- Season chicken pieces with salt and black pepper. Set aside.
- Place cornstarch, beaten eggs, and flour each in separate shallow dishes.
- Dip each chicken piece first in flour, then in beaten eggs, and finally coat with cornstarch. This will make the chicken extra crispy when fried.
- Heat vegetable oil in a large pan over medium-high heat. Carefully add chicken in batches without overcrowding the pan, and fry until golden brown and cooked through, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess oil.
- For the sauce, mix sugar, apple cider vinegar, ketchup, and soy sauce in a medium saucepan. Bring to a boil over medium heat, stirring to dissolve the sugar completely.
- Add the pineapple chunks, red, and green bell pepper pieces, and onion to the sauce. Cook for about 2-3 minutes until the vegetables start to soften.
- Stir in the cornstarch slurry to thicken the sauce, cooking for another minute or until the sauce reaches desired consistency. The sauce should coat the back of a spoon.
- Combine the fried chicken pieces with the sauce, ensuring each piece is well coated. Take care to do this gently to keep the chicken crispy.
